Ingredients:

  • 3 carrots
  • 1 onion
  • 3-4 cloves of garlic
  • 2-in. knob of ginger
  • 2 leeks chopped up
  • 3 stalks of celery
  • 1 bay leaf
  • small bundle of thyme

Tools:

medium-sized sauce pan

Instructions:

  1. Add some oil to a large pot, and place it on the stove on medium heat. Chop up the onions and garlic and throw them in the pot. Wait until the onions are translucent.
  2. Chop up the carrots, celery, and leeks, and add them to the pot. Stir for a few minutes and then fill up the pot with water and bring to a boil.
  3. Add the ginger, thyme, and bay leaf, and allow the pot of water to simmer for at least an hour. Add salt and pepper to taste.
  4. Enjoy! There’s nothing like homemade soup!
